A couple of weeks ago I was in the Nordic Amateur Cook championship finals representing my country of birth, Iceland. I met some formidable competition in the Norwegian, the Finnish and the Danish team and in the end the Finns won. I was great fun and a good learning experience. My own performance was so-so, but I had fun creating two unique dishes from scratch:
